Instructions

Add walnuts, shredded coconut, and protein powder to the food processor and pulse until a fine mixture is formed.

Add the cashew butter, Creamy MCT Oil, peppermint extract, and pulse until well combined.

Add in the almond milk and pulse until a dough-like consistency forms. If the dough is not sticking together, add more cashew butter to the food processor and pulse.

Roll the dough into 1” balls.

Gently roll the balls in the extra shredded coconut for coating.

The keto energy bites can be stored in an airtight container in the refrigerator for up to two weeks.
