Chocolate Mint No Bake Protein Bars (Vegan, Paleo, Keto)

REQUIRED EQUIPMENT: Mixing bowl, 8x8 pan, Parchment paper

  1. In a large bowl, whisk all of the dry ingredients, using a fork or whisk. 

  2. In a smaller bowl, melt the liquid ingredients in a double boiler or microwave and whisk until combined.

  3. Fold wet ingredients into the dry ingredients.

  4. Press into a parchment-lined 8"x8" pan. Top with your choice of toppings. You may have to gently press the toppings down into the protein bar dough to ensure they stay.

  5. Freeze for at least 20 minutes until set, then cut into bars and enjoy! Keep in the refrigerator for as long as they last (a few days).
